Managing HACCP

This three day food safety course will assist your business successfully develop and implement a HACCP based food safety program. The program has been specifically designed to assist catering, operations and senior management meet the new food safety standards and successfully develop and implement a HACCP -based Food Safety Program.

Food Safety Supervisor
(1 day) |
A one day course designed to provide supervisory and front-line managers with the knowledge and skills to implement the on-site food safety program. This course will assist your organisation and you as an individual comply with the requirements of the NSW Food Authority for a trained and competent food safety Supervisor as per the new NSW Food Bill 2009 (Food Safety Supervisor).
Some additional assessments may be required for successful completion of the course, including workplace assessment tasks.
Certification – On successful completion of the course, participants receive a nationally recognised Statement of Attainment; SIT07 Tourism, Hospitality and Events Training Package: SITXFS001A Implement Food Safety Procedures OR SIRRFSA001A Apply Retail Food Safety Practices from SIR07 Retail Services Training Package.

Accelerated Hygiene
(4 hours) |
This practical short workshop will provide your operations staff with the skills and knowledge in basic food hygiene, as required by the Australian Food Standards Code. The training sessions are high impact, participative, and learner-friendly. The course covers basic hygiene principles in a fun and practical way. A key part of the course are two workplace based activities in which participants identify and assess the hygiene standards of their own workplace. The course focuses on helping your key food production, service and sales staff on; the nature of food poisoning, how to prevent cross-contamination, applying hygienic practices, personal hygiene, safe food storage, cleaning and sanitising, and identifying and preventing the occurrence of food safety risks.
Certification – On successful completion of the course, participants receive a nationally recognised Statement of Attainment from SIT07 Tourism, Hospitality and Events Training Package: SITXOHS002 Follow Workplace Hygiene Procedures.

Hygiene Basics for Floor and Bar Staff
(3 hours) |
This short workshop will give your bar staff skills and knowledge in the principles and practices of basic bar hygiene. The course covers bar hygiene principles in a fun and practical way and mainly takes place behind a working bar.
The course focusses on applying hygienic practices in a bar environment, personal hygiene, safe food handling in a bar, cleaning and sanitising the bar and preventing the occurrence of hygiene and infection risks behind the bar.
Certification – On successful completion of the course, participants receive a Statement of Attendance.

HACCP Awareness
(4 hours) |
A short workshop which trains your staff in the principles and applications of Good Hygiene Practices and HACCP. During the workshop, participants are guided to conduct a basic risk assessment of your operations and develop a simple HACCP plan for your business.
Certification – On successful completion of the course, participants receive a nationally recognised Statement of Attainment from the Food Processing Industry Training Package, FDFCORFSY1A: Follow Work Procedures to Maintain Food Safety OR a Statement of Attainment from SIT07 Tourism, Hospitality and Events Training Package: SITXOHS002 Follow Workplace Hygiene Procedures.
